Eggs and Oats

Makes 1 Serving

Ingredients:

1 Whole Egg

4 Egg Whites

Tbsp of Olive Oil

1 Tbsp Onion, finely chopped

1 Tbsp Celery, finely chopped

1/3 Cup of Chopped Tomatoes

1/2 Cup of Oats

1/2 Red Chili, de-seeded and finely chopped (Optional)

Handful of Baby Spinach Leaves, roughly chopped

Small Handful of Basil Leaves, roughly chopped

 

Place the eggs into a bowl and whisk together, add the oats into the bowl and set aside for a couple of minutes.

Heat a large frying pan over a medium heat and add the olive oil.

Add the onion, celery and chili and cook for a couple of minutes until they start to soften up. Then add the eggs and oats mixture, chopped tomatoes and spinach into the pan and cook until the eggs are firm (around 2-4 minutes).

Place onto a plate and then top with the fresh basil leaves.
