Roast Chicken and Cous Cous

Makes 2 Servings

Ingredients:

2 Chicken Breasts

1/2 Zucchini, diced

1/2 Red Pepper, diced

1 cup Cous Cous

1 1/4 cups Chicken Stock

a little Rapeseed Oil (or any other good quality oil)

pinch of Salt and Pepper

Preheat your oven to 200 c / 390 f, then put your cous cous into a large bowl and set aside until later.

Place your chicken on a baking tray and bake in the oven for 25-30 minutes.

Place your chicken stock into a saucepan and heat up until boiling, then pour it over the cous cous, cover the bowl with cling film and then let it rest for 7 or 8 minutes.

While that is going on heat a pan on a medium heat, add the oil, then your zucchini and red pepper and cook for 5 minutes.

When cooked, place your veg into the couscous with a little seasoning and stir in with a fork. Take your chicken out of the oven and plate up!
